Original Recipe # 1

BBQ CHICKEN PIZZA....    BBQ Chicken Pizza With BACON !!!!

So, I am pretty excited about this first post! This is an original semi-homemade recipe (No better way to start) that blends so many of my favorite ingredients; chicken, bacon, bbq sauce, red onions, and..... Pizza of course! In addition, as I mentioned it has bacon, and bacon makes everything better.

At this site, I'll share with you a little bit about each dish, the recipe, as well as photos, videos, or links about the food. As you will soon see, I love simple, yummy food. If you are into fancy gourmet, this is not the place for you. Lastly, I will bring you along with me to experience other great places and food!

I first made this dish for my family about a year ago. It's actually an interesting story how I stumbled upon the idea for this version of a bbq chicken pizza. I looooove, love, love pizza AND bbq. But until now, I never liked the idea of eating bbq chicken on a pizza. One day, however, I was watching Food Network and saw tv chef Sandra Lee cook an amazing-looking one with refrigerated pizza dough. Well I guess it looked so good to me that I made one myself, just using the ingredients I thought would be good, as I did not have her recipe nor her ingredients on hand. Turns out, it was one of the best pizzas I ever had (and I've eaten a WHOLE LOTTA pizza!). The combination of cheeses went perfectly with the tang of the bbq sauce. The red onion was sweet and a great addition, while the bacon topped it off. It's so yummy I still havn't ordered one from a pizzeria. Whenever I crave bbq chicken and pizza, oh! and bacon... I just zip home and throw this delicious pizza in the oven.





Ingredients:

2 boneless, skinless chicken breast
Salt and pepper to season
2 tablespoons of veg. oil
1 small red onion, diced
Refrigerated pizza dough
5-6 strips of cooked, chopped bacon
2 cups BBQ sauce (recommended Bullseye original)
1/2 cup Mozzarella cheese
1/2 cup Colby Jack or Mexican blend cheese
Sprinkle of fresh, chopped parsley

To Make:

  1. Preheat oven to 450 degrees
  2. Prepare pizza dough to package directions, set aside
  3. Season chicken with salt and pepper
  4. Preheat veg. oil in non-stick skillet over medium-high heat
  5. Blacken chicken on both sides and until cooked through, set aside to rest
  6. Shred chicken breasts and combine with 1 cup of bbq sauce, reserve the other cup of sauce
  7. Spread the other cup of bbq sauce onto pizza dough
  8. Top with remaining ingredients, except for the parsley, in this order: Colby Jack cheese, Mozzarella cheese, red onion, bbq chicken mixture, and chopped bacon.
  9. Cook at 450 degrees for 12-14 minutes.
  10. Top with sprinkled parsley, and enjoy!
